Cook Time 30 minutes
Total Time 45 minutes
Servings: 6 servings

Ingredients

  • Ground beef (85–90% lean), 1.5 pounds
  • Yellow onion, 1 small, diced
  • Bell pepper (any color), 1 medium, diced
  • Garlic, 3 cloves, minced
  • Tomato paste, 2 tablespoons
  • Beef broth, 1/2 cup (low-sodium if possible)
  • Canned diced green chiles, 1 (4-ounce) can, drained
  • Eggs, 4 large
  • Heavy cream, 1/2 cup
  • Cheddar cheese, 2 cups shredded (divided)
  • Monterey Jack or Pepper Jack, 1 cup shredded
  • Olive oil or avocado oil, 1 tablespoon
  • Salt and black pepper, to taste
  • Taco seasoning, 2–3 tablespoons (see notes below)
  • Optional toppings: sour cream, sliced avocado, fresh cilantro, sliced jalapeños, lime wedges

Method

  1. Preheat the oven and prep the dish. Heat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with oil or nonstick spray.
  2. Sauté the veggies. Warm the oil in a large skillet over medium heat. Add onion and bell pepper, season with a pinch of salt, and cook 4–5 minutes until softened. Stir in the garlic and cook 30 seconds.
  3. Brown the beef. Add the ground beef to the skillet. Break it up with a spatula and cook until no longer pink, about 6–8 minutes. Drain any excess fat if needed.
  4. Season and simmer. Sprinkle in the taco seasoning. Stir in tomato paste, green chiles, and beef broth. Simmer 3–4 minutes to thicken slightly. Taste and adjust salt and pepper.
  5. Make the egg mixture. In a bowl, whisk eggs, heavy cream, 1 cup shredded cheddar, and a pinch of salt and pepper until smooth.
  6. Layer the casserole. Spread the beef mixture evenly in the baking dish. Pour the egg mixture over the top. Sprinkle with the remaining cheddar plus the Monterey Jack.
  7. Bake. Place on the center rack and bake 20–25 minutes, until the edges are set and the center is just slightly jiggly. The top should be golden and bubbly.
  8. Rest and garnish. Let it rest 8–10 minutes to set. Add your favorite toppings—think sour cream, cilantro, avocado, or jalapeños. Slice and serve.
