Prep the cucumber: Wash and dry the cucumber. Slice into thick rounds, about 1/2 inch.
If using an English cucumber, you can leave the skin on. If the slices are watery, lightly pat them dry with a paper towel.
Make the spread: In a bowl, mix the cream cheese, sour cream (if using), lemon juice, lemon zest, dill, chives, and garlic. Season with a pinch of salt and pepper.
Stir until smooth and spreadable.
Pipe or spoon: For a neat look, transfer the mixture to a small piping bag or a zip-top bag with the corner snipped. Otherwise, use a spoon to top each cucumber slice with about a teaspoon of the mixture.
Add the salmon: Cut smoked salmon into small ribbons or squares. Gently fold or twirl a piece onto each cucumber round so it sits nicely on top of the cream cheese.
Finish with garnish: Sprinkle with extra dill or chives.
Add a few capers and a tiny pinch of everything seasoning if you like. A crack of black pepper on top is great too.
Serve: Arrange on a platter and serve right away, or chill for 10–15 minutes for a slightly firmer bite.
