Keto Salisbury Steak With Mushroom Gravy - Comforting, Low-Carb, and Satisfying

Ingredients
  

  • For the steaks: 1 1/2 pounds (680 g) ground beef, 80–85% lean
  • 1/3 cup finely minced onion
  • 1 large egg
  • 1/3 cup almond flour (or crushed pork rinds)
  • 1 tablespoon Worcestershire sauce (check for low sugar)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter or avocado oil for searing
  • For the mushroom gravy: 2 tablespoons butter
  • 8 ounces (225 g) cremini or white mushrooms, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 1/2 cups beef broth (low sodium)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 cup heavy cream (optional, for richer gravy)
  • 1/2 teaspoon xanthan gum (use 1/4 teaspoon at a time), or reduce to thicken naturally
  • Salt and pepper to taste
  • To serve: Chopped fresh parsley
  • Cauliflower mash, zucchini noodles, or steamed greens

Method
 

  1. Mix the steaks. In a large bowl, combine ground beef, minced onion, egg, almond flour, Worcestershire, Dijon, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined. Don’t overwork the meat.
  2. Shape the patties. Form 5–6 oval patties, about 3/4-inch thick. Press a shallow dimple in the center of each to prevent doming.
  3. Sear the steaks. Heat butter or oil in a large skillet over medium-high. Sear patties 3–4 minutes per side until browned. Transfer to a plate; they’ll finish cooking in the gravy.
  4. Sauté onions and mushrooms. Lower heat to medium. Add 2 tablespoons butter, then sliced onions and mushrooms. Cook 6–8 minutes, stirring, until they release liquid and start to brown.
  5. Add garlic and season. Stir in garlic, thyme, and smoked paprika. Cook 30–60 seconds until fragrant.
  6. Build the gravy. Pour in beef broth and Worcestershire, scraping up browned bits. Simmer 3–4 minutes to reduce slightly.
  7. Thicken. If using xanthan gum, sprinkle in 1/4 teaspoon while whisking constantly. Let it simmer 1–2 minutes, then add more if needed. Alternatively, simmer longer to reduce naturally. Stir in heavy cream if using. Taste and season with salt and pepper.
  8. Finish the steaks. Nestle patties into the gravy along with any juices. Cover and simmer 6–8 minutes, flipping once, until cooked through (internal temp about 160°F/71°C).
  9. Serve. Spoon gravy over the steaks, garnish with parsley, and serve with cauliflower mash or your favorite low-carb side.
