Keto Reuben Casserole - All the Flavor, None of the Bread

Prep Time 15 minutes
Cook Time 40 minutes
Total Time 55 minutes
Servings: 8 servings

Ingredients

  • Corned beef: 1.5 pounds, sliced or chopped (deli slices or leftover brisket both work)
  • Sauerkraut: 2 cups, well-drained and squeezed dry
  • Swiss cheese: 12 ounces, sliced or shredded
  • Cream cheese: 4 ounces, softened
  • Mayonnaise: 1/2 cup
  • Sugar-free ketchup: 1/4 cup
  • Dill pickles or relish: 2 tablespoons, chopped (no-sugar-added)
  • Apple cider vinegar: 1 teaspoon (optional, for extra tang)
  • Onion powder: 1/2 teaspoon
  • Smoked paprika: 1/4 teaspoon
  • Caraway seeds: 1/2 teaspoon (optional, for “rye” flavor)
  • Black pepper: 1/4 teaspoon
  • Butter: 1 tablespoon, for greasing the baking dish
  • Fresh parsley: 1–2 tablespoons, chopped (optional garnish)

Method

  1. Preheat and prep: Heat the oven to 375°F (190°C). Lightly butter a 9x13-inch baking dish.
  2. Drain the sauerkraut: Place sauerkraut in a clean kitchen towel and squeeze out as much liquid as possible. This step keeps the casserole from getting watery.
  3. Make the keto “Russian” dressing: In a bowl, mix cream cheese, mayonnaise, sugar-free ketchup, dill pickles, apple cider vinegar, onion powder, smoked paprika, and black pepper until smooth.
  4. Layer one: Spread half the corned beef evenly in the dish.
  5. Layer two: Add half the sauerkraut on top of the beef. Sprinkle with caraway seeds for that rye-like flavor if using.
  6. Layer three: Dollop and spread half the dressing over the sauerkraut.
  7. Layer four: Top with half the Swiss cheese.
  8. Repeat: Add the remaining corned beef, sauerkraut, dressing, and finish with the rest of the Swiss cheese.
  9. Bake: Cover loosely with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until the cheese is melted, bubbly, and lightly golden.
  10. Rest and serve: Let the casserole rest for 10 minutes so it sets. Slice, garnish with parsley, and serve hot.
