Servings: 4 servings

Ingredients

  • Cremini or white button mushrooms (16 oz), cleaned and halved if large
  • Unsalted butter (3–4 tablespoons)
  • Olive oil or avocado oil (1 tablespoon)
  • Garlic (3–4 cloves), minced
  • Fresh thyme (1–2 teaspoons) or parsley, chopped
  • Lemon (1/2), for juice and optional zest
  • Salt (preferably kosher)
  • Black pepper, freshly ground
  • Red pepper flakes (optional, for heat)
  • Grated Parmesan (optional, for finishing)

Method

  1. Prep the mushrooms: Wipe them clean with a damp paper towel or use a soft brush. Trim any tough stems. Halve larger mushrooms so they cook evenly.
  2. Preheat the pan: Place a large skillet over medium-high heat. Add the oil and let it get hot until it shimmers. A hot pan is key for a good sear.
  3. Sear the mushrooms: Add mushrooms in a single layer. Don’t crowd the pan. Let them cook undisturbed for 3–4 minutes so they brown on one side.
  4. Toss and continue cooking: Stir and cook for another 3–4 minutes until the mushrooms are golden and most of their moisture has evaporated.
  5. Add butter: Reduce heat to medium. Add the butter and let it melt, tossing the mushrooms to coat. The butter will soak into the mushrooms and add a glossy finish.
  6. Stir in garlic: Add the minced garlic and cook for 30–60 seconds, stirring often. Don’t let the garlic burn or it will taste bitter.
  7. Season: Sprinkle with salt, black pepper, and a pinch of red pepper flakes if you like a little kick.
  8. Finish with freshness: Turn off the heat. Add fresh thyme or parsley and a squeeze of lemon juice. Toss to combine. Taste and adjust salt and lemon as needed.
  9. Optional topping: Shower with a bit of grated Parmesan right before serving for extra savoriness.
  10. Serve: Enjoy hot as a side dish, over steak or chicken, or spooned onto cauliflower mash.
