Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes
Servings: 6 servings

Ingredients

  • Clams: 2 (6.5-ounce) cans chopped clams, juices reserved; or about 1 pound fresh clams, steamed and chopped
  • Clam juice or broth: 1 to 1 1/2 cups (use the canned clam liquid plus extra bottled clam juice as needed)
  • Butter: 2 tablespoons, for sautéing and richness
  • Bacon: 3 slices, chopped (optional but recommended for smoky depth)
  • Onion: 1 small, finely diced
  • Celery: 2 ribs, finely diced
  • Garlic: 2 cloves, minced
  • Cauliflower: 2 cups small florets, or about 1 1/2 cups riced cauliflower (the potato swap)
  • Heavy cream: 1 cup
  • Unsweetened almond milk or chicken broth: 1/2 cup (to lighten the dairy and adjust thickness)
  • Cream cheese: 2 ounces, softened (helps thicken and adds body)
  • Xanthan gum: 1/4 teaspoon (optional thickener for a classic chowder texture)
  • Bay leaf: 1
  • Dried thyme: 1/2 teaspoon (or 1 teaspoon fresh)
  • Salt and pepper: To taste
  • Fresh parsley or chives: For garnish

Method

  1. Crisp the bacon: In a heavy pot over medium heat, cook the chopped bacon until the fat renders and the pieces are crisp. Transfer bacon to a plate and leave about 1 tablespoon of fat in the pot.
  2. Sauté aromatics: Add butter to the pot. Stir in onion and celery with a pinch of salt. Cook 5–6 minutes, stirring, until soft and translucent. Add garlic and cook 30 seconds, until fragrant.
  3. Add cauliflower: Stir in the cauliflower florets or riced cauliflower. Cook 2–3 minutes to coat in the aromatics.
  4. Build the broth: Pour in reserved clam juice plus enough bottled clam juice to total about 1 to 1 1/2 cups. Add bay leaf and thyme. Bring to a gentle simmer, cover, and cook 8–10 minutes, until the cauliflower is tender.
  5. Create the creamy base: Reduce heat to low. Add heavy cream, almond milk or broth, and cream cheese. Stir until the cream cheese melts and the mixture is smooth.
  6. Thicken (optional): Sprinkle xanthan gum lightly over the surface while whisking to avoid clumps. Simmer 1–2 minutes until slightly thicker. Start with 1/8 teaspoon if you prefer a lighter texture; add more only if needed.
  7. Add clams: Stir in the chopped clams and half the crispy bacon. Simmer gently 2–3 minutes. Do not boil, or the clams can turn tough.
  8. Season: Remove the bay leaf. Taste and season with salt and black pepper. Clam juice can be salty, so adjust carefully.
  9. Finish and serve: Ladle into bowls. Top with remaining bacon and sprinkle with parsley or chives. Serve hot.
