Keto Chicken Parmesan Casserole - Comforting, Low-Carb, and Easy

Ingredients
  

  • 3 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
  • 2 cups low-carb marinara sauce (look for no added sugar; Rao’s is a solid choice)
  • 1 cup shredded mozzarella
  • 1/2 cup shredded provolone (optional but adds richness)
  • 1/2 cup grated parmesan (for the topping and some in the mix)
  • 1/3 cup almond flour (blanched, fine ground)
  • 2 tablespoons olive oil (or melted butter)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)
  • 1 tablespoon tomato paste (optional, for a thicker, richer sauce)

Method
 

  1. Preheat and prep: Heat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Season the chicken: In a large bowl, combine the cooked chicken with a pinch of salt, black pepper, and half the Italian seasoning. Toss to coat.
  3. Enrich the sauce: In a separate bowl, stir the marinara with tomato paste (if using), minced garlic, remaining Italian seasoning, and red pepper flakes. Taste and adjust salt and pepper.
  4. Layer the base: Spread a thin layer of sauce over the bottom of the baking dish. Add the chicken in an even layer. Pour the rest of the sauce over the chicken and gently stir to coat everything.
  5. Add the cheeses: Sprinkle mozzarella and provolone evenly over the sauced chicken. Add 2 tablespoons of the grated parmesan to the top.
  6. Make the crunchy topping: In a small bowl, mix the almond flour, remaining parmesan, and olive oil. Stir until it forms moist crumbs. Season lightly with salt and pepper.
  7. Top and bake: Scatter the almond-parmesan crumbs over the cheese layer. Bake for 20–25 minutes, until the casserole is bubbling and the topping is golden.
  8. Broil for crispness (optional): If you want a deeper crust, switch the oven to broil for 1–2 minutes. Watch closely to avoid burning.
  9. Rest and garnish: Let the casserole sit for 5–10 minutes to set. Finish with chopped basil or parsley before serving.
