Keto Chicken Bacon Ranch Pinwheels - Easy, Flavor-Packed Bites

Prep Time 15 minutes
Total Time 15 minutes
Servings: 8 servings

Ingredients

  • Cooked chicken (2 cups, finely shredded; rotisserie chicken works great)
  • Cream cheese (8 oz, softened)
  • Ranch seasoning (1–1.5 tbsp; homemade or store-bought)
  • Mayonnaise (2–3 tbsp, for extra creaminess)
  • Cheddar cheese (1 cup, shredded)
  • Bacon (6–8 slices, cooked crispy and crumbled)
  • Green onions (2–3, thinly sliced)
  • Fresh parsley or dill (2 tbsp, chopped; optional but brightens flavor)
  • Cucumber (1 small, seeded and finely diced; optional crunch)
  • Low-carb tortillas or cheese wraps (4–6 large)
  • Lemon juice (1 tsp; optional, to lift the richness)
  • Salt and pepper (to taste)

Method

  1. Crisp the bacon: Cook your bacon until very crisp, then drain and crumble. Set aside to cool so it stays crunchy in the mix.
  2. Soften the cream cheese: Leave it at room temp for 20–30 minutes, or microwave in 10-second bursts until spreadable. Soft cream cheese blends smoother and won’t tear your wraps.
  3. Mix the filling: In a bowl, combine cream cheese, mayonnaise, ranch seasoning, lemon juice (if using), and a pinch of pepper. Stir until smooth.
  4. Fold in the goods: Add shredded chicken, cheddar, crumbled bacon, green onions, herbs, and cucumber (if using). Stir gently to keep some texture. Taste and adjust salt.
  5. Prep the wraps: Lay out low-carb tortillas or cheese wraps. If using tortillas, warm them briefly in a dry skillet to make them pliable. If using cheese wraps, pat dry with a paper towel for better grip.
  6. Spread and roll: Spread an even layer of the filling over each wrap, leaving a 1/2-inch border. Roll tightly from one end to the other to create a firm log.
  7. Chill: Wrap each log in plastic wrap and refrigerate for 20–30 minutes. Chilling helps them slice cleanly and hold their shape.
  8. Slice: Using a sharp knife, cut into 1–1.5-inch pinwheels. Wipe the blade between cuts for neat edges.
  9. Serve: Arrange on a platter and garnish with extra herbs or a sprinkle of cheddar. Add a side of ranch for dipping if you like.
