Preheat the waffle maker. Plug it in and let it get hot. A hot waffle iron helps create crisp edges.
Mix the batter. In a small bowl, whisk the egg. Add shredded cheese, almond flour, baking powder, and seasonings.
Stir until evenly combined. The mixture will be thick and slightly chunky from the cheese.
Grease the plates. Lightly spray the top and bottom plates with cooking spray or brush with melted butter.
Add a base layer of cheese (optional but crispier). Sprinkle a tiny pinch of cheese directly on the waffle plate before adding batter. This helps create a golden, lacy edge.
Cook the first chaffle. Spoon half the batter onto the mini waffle maker (or all of it for a standard iron).
Close the lid and cook for 3–4 minutes, or until steam slows and the chaffle looks golden.
Let it set. Carefully remove the chaffle with a silicone spatula and place it on a wire rack for 1–2 minutes. This step firms it up and keeps it from getting soggy.
Repeat. Cook the remaining batter the same way. Add any toppings or fillings once they’re done.
Serve hot. Enjoy plain, as a sandwich bun, or topped with butter and sugar-free syrup for a sweet version.
