Prep the oven or air fryer: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment and set a wire rack on top if you have one.
For an air fryer, preheat to 400°F (205°C).
Dry the cauliflower: Wash and thoroughly pat dry the florets. Dry florets crisp up better and help the coating stick.
Season and coat: In a large bowl, toss cauliflower with avocado oil. In a separate bowl, mix almond flour, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper. Sprinkle the dry mix over the oiled cauliflower and toss until evenly coated.
Bake or air fry: Spread florets in a single layer.
Bake for 20 minutes, flip, then bake another 10–15 minutes until edges are browned and centers are tender. For air fryer, cook in batches for 12–15 minutes total, shaking halfway, until crisp and golden.
Make the sauce: In a small saucepan over low heat, melt butter. Whisk in buffalo sauce and vinegar.
Keep warm. Don’t boil or the butter may separate.
Toss to coat: Transfer hot cauliflower to a large bowl. Pour the warm buffalo sauce over and toss until every piece is glossy and coated.
Finish and serve: Taste and add a pinch of salt if needed. Serve right away with ranch or blue cheese and celery sticks.
