Servings: 4 servings

Ingredients

  • Almond flour (fine blanched)
  • Mozzarella cheese (shredded), divided for crust and topping
  • Cream cheese
  • Eggs (for the crust and for topping)
  • Bacon or breakfast sausage
  • Bell pepper (any color)
  • Red onion or green onion
  • Baby spinach (optional)
  • Olive oil or avocado oil
  • Garlic powder
  • Italian seasoning or dried oregano
  • Salt and pepper
  • Hot sauce or red pepper flakes (optional)

Method

  1. Preheat and prep: Heat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment. Lightly oil the parchment to prevent sticking.
  2. Make the keto crust (fathead-style): In a microwave-safe bowl, combine 1 1/2 cups shredded mozzarella and 2 ounces cream cheese. Microwave in 20–30 second bursts, stirring in between, until melted and smooth. Stir in 1 cup almond flour, 1 beaten egg, 1/2 teaspoon garlic powder, 1/2 teaspoon Italian seasoning, and a pinch of salt. Mix until it forms a dough.
  3. Shape the crust: Place the dough on the prepared parchment. Top with another sheet of parchment and roll it into a 10–12 inch circle. Peel off the top parchment. Use a fork to prick a few holes to prevent bubbling.
  4. Par-bake: Bake the crust for 8–10 minutes until lightly golden at the edges. Remove and set aside. Lower oven temperature to 400°F (205°C).
  5. Cook the protein: While the crust bakes, cook 4–5 slices of chopped bacon or 6 ounces of sausage in a skillet over medium heat until browned and crisp. Drain on paper towels.
  6. Sauté the veggies: In the same skillet, add a small drizzle of oil if needed. Sauté 1/2 cup diced bell pepper and 1/4 cup sliced red onion for 2–3 minutes until slightly tender. Toss in a handful of spinach and cook just until wilted. Season with a little salt and pepper.
  7. Add a sauce layer (optional): For a light base, brush the crust with 1–2 teaspoons olive oil and sprinkle a pinch of garlic powder. You can also spread 2 tablespoons of sugar-free marinara or a thin smear of cream cheese for richness.
  8. Assemble: Sprinkle 1 cup shredded mozzarella over the crust. Scatter the cooked bacon or sausage and sautéed vegetables evenly. Make 2–3 small wells in the toppings for eggs.
  9. Add the eggs: Crack 2–3 eggs into the wells. Season the top with salt, pepper, and a pinch of Italian seasoning or red pepper flakes.
  10. Bake to finish: Return the pizza to the oven at 400°F (205°C) for 8–12 minutes, or until egg whites are set and yolks reach your preferred doneness. If you like a runny yolk, start checking at 8 minutes.
  11. Garnish and serve: Let it rest 2–3 minutes. Finish with chopped green onions or parsley and a dash of hot sauce if you like heat. Slice and serve warm.
