Preheat and prepare: Heat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment or foil and top with a wire rack if you have one.
Lightly grease to prevent sticking.
Cut the bacon: Slice each bacon strip into thirds. Thin-cut bacon wraps and crisps better around small sausages.
Mix the coating: In a small bowl, combine the brown-style sweetener, smoked paprika, garlic powder, black pepper, and cayenne.
Wrap the smokies: Roll each little sausage in a bacon piece. Secure with a toothpick and place seam-side down on the rack.
Season: Sprinkle the sweetener-spice mix evenly over the tops.
For extra coverage, lightly roll each piece in the mixture.
Bake: Cook for 22–28 minutes, or until the bacon is browned and crisp. Rotate the pan halfway for even cooking. If needed, broil for 1–2 minutes at the end to crisp further.
Rest: Let them sit 3–5 minutes.
The sweetener glaze will set slightly and firm up the exterior.
Serve: Transfer to a platter and enjoy hot. They’re great as-is or with a small bowl of sugar-free BBQ or mustard for dipping.
