Preheat the oven: Set your oven to 400°F (205°C).
Line a baking sheet with foil or parchment and place a wire rack on top. This helps the bacon crisp and keeps the bites from sitting in grease.
Prep the chicken: Pat the chicken dry with paper towels. Cut into even 1-inch cubes for consistent cooking.
Season: In a bowl, toss chicken with 1 tablespoon oil, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and 1/2 teaspoon onion powder.
Add a pinch of red pepper flakes if you like heat.
Wrap with bacon: Cut bacon slices in half crosswise. Wrap each chicken cube with a half slice and place seam-side down. Secure with a toothpick if needed.
Arrange on rack: Space bites evenly on the rack so air can circulate.
Don’t crowd the pan.
Bake: Bake for 18–22 minutes, until the bacon is browned and the chicken reaches an internal temperature of 165°F (74°C). If you want extra crisp, broil for 1–2 minutes at the end. Watch closely to avoid burning.
Rest and serve: Let the bites rest for 3–5 minutes.
Serve with keto-friendly dips like ranch or chipotle mayo.
